Can you guess what I'm doing today? The zucchinis are outrageously PROLIFIC in my Dad's garden these days. He gave me SO much of the stuff that my car was chock full of it this week before I took matters into my own hands and delivered some to my good friends. :) Next on the list, start grating away and see if I can try to perfect my own little zucchini bread recipe. I really wish I could take credit for the loaf in the pic below. It was made by my brother Mark, we call him Marky Stewart. It seems like everyone in my family is trying out their own recipes for this popular squash we have so much of all of a sudden.
Mine are probably going to be in mini bread loaves or cupcake pans. I'm excited about this little baking adventure, though!
