Killer Bagel, on Bread

Hello friends! Hope you don't mind the occasional food post from me! While I wouldn't define myself as a "foodie" since those aficionados seem much more well-informed than myself, I would call myself a food LOVER.
Long ago when I was in college there was a coffee shop a few blocks away that served something called Killer Bagels. I was crazy about 'em! Usually I would order mine with an Asiago bagel. (so delish!) but since I didn't have bagels at the time I made these little open faced sandwiches below, I just decided to put it on Asiago bread instead. (Trader Joe's has an awesome loaf! )  I also used goat cream cheese instead of regular. If you're interested in making these just layer these in order:

  • Toasted Asiago bread or bagel
  • Cream cheese
  • Lettuce blend, or just spinach leaves
  • Thinly sliced Tomatoes & Cukes
  • Nutritional Yeast & Salt & pepper to taste

Let me know if you try it and like it! It's one of my favorite light mid-day lunches!

  4. I'm a freak who is not really a big bagel fan (even NY bagels), but I have to say, this looks fantastic. "Goat cream cheese"--need!
